Grape variety: Chardonnay; Verdeca.
Territory: all vineyards are cultivated in the Salento wine-producing area.
Alcohol content: 12,5% by vol.
Fermentation and wine-making notes: the initial stage of fermentation into inox steele tanks at thermo-controlled temperature, afterward the must is put in barriques where it finishes the fermentation process.
Aging: the complex structure of this white wine allows a long storage throughout the years.
Features: straw yellow color with fleeting hints of greeny. Intense Bouquet, and pleasantly fruity with light notes of cedar, tropical fruits, melon, and ripe apricots. At the palate smooth, dense, and persistent, with a delicate touch of vanilla in the end.
Recommendation: It matches perfectly with salty fish-based recipes, white meats, and several types of cheeses.
