The classic version of Valdobbiadene DOCG.
Immediate and prolonged on the nose, the aromatic perception is facilitated by a medium residual sugar.
White peach and ripe apple are the main fruity descriptors, while acacia blossom and rosehip are the floral ones. On the palate the modest sugary residue blends delicately with the acid and saline part, transmitting a persistent harmonic and prolonged velvety sensation that invites continuous drinking.

Type: Charmat method sparkling wine – Extra dry.

Grape variety: Glera 100%, known as Prosecco.

Altitude: 200-250 m asl

Soil: Loose on low fertility morainic soil.

Appearance: Hill on the southern slope.

Climate: Continental – average annual rainfall of 1250 mm.

System: Guyot.

Density: 4,000 per hectare.

Yield: Maximum 135 quintals per hectare.

Harvest: September 10 – 25.

Vinification: Soft pressing in a pneumatic press, sedimentation of the must, and fermentation at a controlled temperature with inoculation of selected yeasts. Aging in steel barrels for at least 4 months.

Second fermentation: Charmat method for 30 days in autoclave.

Alcohol: 11% Vol.

Total acidity: 5.8 g/lt.

Residual sugar: 15.5 gr/lt.

Sensory profile: With sugar residues of around 15 grams it is the classic prosecco. It has a brilliant straw yellow color, and a fresh and rich aroma of floral and fruity aromas such as green apple, peach, and citrus. The flavor is soft, dry, and alive.

Pairings: Excellent as an aperitif but also in combination with legume soups, pasta with delicate sauces, seafood, white meats, and fresh cheeses.

Serving temperature: from 7° to 8° degrees.
