Tasting notes:

Bright yellow with golden reflections, nose that pushes on citrus fruits and the smells of Mediterranean scrub, centered mouth thanks also to a light tannic presence, full-bodied and vertical sip. Nice almond finish.

Salted fish, pasta and rice dishes with shellfish, grilled fish, Gallura soup, fresh cheeses.

Vinification and aging:

The must obtained from a soft pressing of the grapes ferments in steel at a temperature of 16°C for about 20 days. At the end of the alcoholic fermentation, the wine obtained is aged for a part in steel on its fine lees with repeated bâtonnage of the mass and another small part, around 20%, in small first passage oak barrels, again with repeated bâtonnage. After 8 months of refinement, the two masses are blended, clarified, filtered and bottled. The bottled wine ages for a further month in glass before being marketed.

Vineyards:

Espalier system
In the locality of Enas the existing vineyards are planted with espaliers. Here, synthetic chemistry has been banned for the cultivation of the soil, vines and grapes in the name of maximum respect for the earth and the environment. The vineyard has a layout that favors tillage and ventilation of the grapes, and is in harmony with the surrounding landscape: a natural amphitheater overlooking the Gulf of Olbia, made up of hills planted with vines, green pastures, olive groves and cork oaks.
