Malavoglia is our Grecanico produced from vineyards located on the northern slope of Etna.
It is a straw-yellow colored wine, with aromas ranging from yellow flowers to tropical fruits. In the mouth it is refreshing, with an excellent gustatory persistence.

Excellent as an aperitif, with fish dishes and soft cheeses.

The bunches of Grecanico are harvested manually towards the end of October. As soon as they arrive in the cellar, the grapes are destemmed and left to macerate at a low temperature for 8 hours, in contact with the skins, to favor aromatic extraction.
Subsequently, the must is cleared and left to ferment in steel tanks at a controlled temperature of 14/16°C. Here, the wine rests for about 6 months in contact with the fermentation yeasts, to release all the most precious substances, such as polysaccharides and mannoproteins.
The wine is then bottled and, before being marketed, it ages for another 3 months in the bottle.
