9.000
Title
9.000
Vintage:
2019
Tasting notes:
Bright ruby red, intense nose, finely delicate. Hints of rose and bramble flowers. Light spicing and roasting. Medium tannic, with a decisive finish. Elegant wine.
Grape variety:
100% Carignano
Harvest:
Manual harvest, only in the morning, in the second ten days of September
Ground:
From granite weathering
Food pairings:
Feathered game, meat with mushrooms.
Vinification and ageing:
The hand-harvested grapes are destemmed and fermented in contact with the skins for 15 days in an open vat without temperature control with repeated punching down. At the end of the alcoholic fermentation, the wine separated from the skins is decanted into an oak barrel where the malolactic fermentation takes place and remains to refine for 19 months. Before bottling, the wine is decanted a couple of times to eliminate any sediment. Refine a further month in glass before going out on the market.
Maceration:
A very limited production for our IGT Carignano, enhanced by a magnum bottle format. The large formats, in addition to giving importance to the wine and being used to celebrate important moments, favor a slower and more harmonious refinement and allow an improvement in the organoleptic characteristics of the wine. Our bottle is kept in an elegant wooden box which makes it a precious gift.
